Pupcakes to Celebrate
Six years ago, I found a recipe that had nothing added in a recipe that I wouldn't want Hobson to have for a pupcake. Of course, we have moved twice since I had the printed copy and I have been through a few phones, which typically carry over screenshots, however, one of those phones deleted ALL my texts & images. The first year that I made the pupcakes, they didn't really form as well as I felt like they should, but that was probably because they were gluten free without any substitute. So I had made notations on that printed version that I can't seem to find.
I decided to look up some new options this year for a recipe, and really didn't find anything that I felt like would really help, so I decided to just throw a bunch of stuff in the bowl and see what would happen!
I know that really doesn't help with explaining how to make them to all of you, but unlike baking for humans, I don't feel like full measuring is needed for pupcakes, so really, anyone can do it and the satisfaction of a happy pup should make you feel pretty happy about your baking abilities!
To make the 6 large and dozen mini pupcakes, I used:
3 medium apples (no skin, no core or seeds & diced in food processor)
1/4 cup of peanut butter
1 egg
1/2 cup of flour (all purpose or wheat flour)
1 tablespoon of baking powder
1/2 can of pumpkin puree
Set oven at 350 degrees. Mix all ingredients in a large bowl. Scoop mix into cupcake tin. Bake for 15-20 minutes. Take them out & let them cool. Put in fridge. I put all in the fridge overnight & then put extras in freezer the following day to have for the pups for future birthday celebrations (I like to have them when we celebrate human birthdays for the pups too!).
